Cheese Tarts

Ingrediants


  • 175 grams (6oz) plain flour
  • 90 grams (3oz) butter
  • 6 tsp water 
  • 2 eggs
  • 60 grams (2oz) grated cheese
  • 150 ml (1/4 pint) milk
Method

  • Rub together the flour and butter with you fingers
  • Keep rubbing until the mixture looks like breadcrumbs
  • Add the water to the mixture
  • Bring the mixture into a ball
  • Make a ball of the pastry, the bowel will be clean when the ball in ready
  • Sprinkle some flour over the rolling pin, table and pastry 
  • Roll the pastry until it is about 4 mm thick 
  • Cut the cases and put them in a bun tin
  • Preheat the oven to 200 degree/ 400 degrees farenheit/ Gas mark 6 
  • In a separate bowel mix together your eggs, cheese and milk
  • Spoon in the mixture into the pastry cases
  • Bake for 15 minutes
  • Leave then to cool - If you can wait!
  • Top them off with a cherry tomoatoe!

Chocolate Fridge cake

Chocolate Fridge cake


Ingrediants
  • 1 Chocolate bar for topping
  • 125 grams (4oz) castor sugar
  • 125 grams (4oz) mixed, dried fruit
  • 250 grams (8oz) broken digestive biscuits
  • 1 tbsp cocoa powder
  • 175 grams (6oz) butter
  • Chocolate strands


Method

  • Melt the butter
  • Add the cocoa powder and sugar
  • Now add fruit and biscuits
  • Mix everything up
  • Put foil in 20 cm cake tin; make sure there is some foil overlapping the tin
  • Pour in the mixture
  • Press it down
  • Place it in the fridge and leave for 2 hours
  • After 2 hours, melt the chocolate and pour it onto the cake, spread it about the cover the cake
  • Finish off with the chocolate strands to decorate



You can put your fridge cases in paper cases as well as a tin!

Enjoy the best from your garden!

I enjoy cooking and baking with my own produce, I feel that I don't think about how this fruit has got to my plate, or, where it has come from! I know that it is good, honest food! Try to grow and use food from your garden to experience the wonders of home grown food!

Mint and Garlic salad dressing

To serve this dressing I would recommend just a plain bowel of chopped tomatoes. Try and get tomatoes that are large, fresh and juicy. It always feels so appealing to make food from your own produce so maybe try and grow some tomatoes, but , of  course there is always the quick and easy way to get ingredients - the Supermarket!
Any way, you are probably wondering when this recipe is going to be revealed! Well I now have the honour to tell you how to make mint and garlic salad dressing!

Method:


  1. For this recipe you will need a food processor....or a smoothie make if it makes life so much easier and , of course , saves you the trouble of buying a food processor!
  2. Add 1 generous tsp of whole grain French Mustard
  3. 3 tbsp of walnut oil
  4. 1 tbsp of balsamic oil
  5. 3 cloves of garlic
  6. a generous helping on washed mint leaves
  7. About 3 inch length of peeled and chopped cucumber  ( too loosen the dressing)
  8. A sprinkle of Maldon sea salt flakes
  9. Turn on your food processor and mix until smooth and you have no lumps of leaves from the garlic and mint!
  10.  Serve with your delicious tomatoe salad!

Lemon Cupcakes

These little cakes are perfect for a child's party or just a nice little snack for tea time!

You will need: 

  • 1 Large bowel
  • Sieve
  • Cooling rack
  • 2 bun tins, fill them with paper cake cases
  • 1 Teaspoon
  • 1 Tablespoon
  • 1 Electric whisk
Ingredients:

  • 125 g (4 oz) Self-raising flour
  • 125 g (4 oz) butter (room temperature)
  • 1 tsp Baking powder
  • 2 large eggs
  • 1 tsp vanilla essence
  • The zest of one lemon
Method:
Set the oven to 190 degrees/ 375 fharanite/ Gas mark 5
  1.  Sieve the flour and baking powder and add the zest of the lemon
  2. Add all the other ingredients, beat the eggs and put them in with the butter sugar and vanilla essence and butter
  3. Whisk until it's creamy, you will know when it is ready when the mixture will fall off the spoon in a soft dollop
  4. Fill up the cases, put a teaspoon of mixture into each case (or more), bake for 20 minutes
  5. Take out the cakes leave them to cool for about 1 hour to 3/4 of an hour.
For the icing:

1. Add water sparingly to the food colouring and icing sugar. 
2. Drop a dollop of icing sugar into the centre of your cake and spread about. 
3. To decorate use anything sweet.... cherries, raisins, sweets, etc.

Upside-Down cake

Upside-Down pudding is a simple and very tasty pudding to make. It is a great pudding to have after a yummy Sunday lunch to use up the rest of your fruit from the week.

You will need:
  • Electric Whisk
  • Large Mixing Bowel
  • Sieve
  • 20 cm diameter cake tin with loose base
  • 1 table spoon
  • 1 knife
  • 1 Serving plate (preferably bigger than the cake tin itself)
Ingredients:

  • 1 tsp of baking powder
  • 125 g (4 oz) of Self raising flour
  • 125 g (4 oz) of cooking butter
  • 125 g (4 oz) of castor sugar 
  • 2 large eggs (beaten)
  • 1 Vanilla pod of 1 tsp of vanilla essence.
  • 6-7 Victoria plumbs and 11-13 blueberries 
Method:
Preheat your oven to 190 degrees/ 375 degrees Fharenheit / Gas mark 5
1. Sieve the flour
2. Add all of the ingredients together in a bowel and whisk until it's creamy. You will know when the mixture is ready because it will fall easily off a spoon.
3. Prepare the tin, grease with butter
4. Arrange your fruit in your own design and cover your creamy mixture all over the fruit and place in the oven for 20 minutes
5. After 20 minutes leave to cool and come back in 5 minutes to flip to cake.
6. Place a plate on top of the tin and hold the base, then flip it!! Remove the tin and gently peel away the base of the tin. And there you have your upside-down cake! Enjoy! 
Your finished result!


Vegetarian Stir-Fry

Stir-Fry is a traditional Chinese dish that enables you to use your vegetables that have no idea what to do with! In this particular post I will be telling you exactly what you will need and , of course, the method of how to make this delicious dish!

You will need:


  • Sharp knives
  • Colander 
  • Chopping board
  • Large frying pan or wok
With a Stir-Fry you can use all sorts of fruit and vegetables; So make sure that you have a wide range of ingredients to make this dish really bring out the flavours and colours of the fruit and veg! As a tasty accompaniment to your stir-fry you could add some delicious noodles (see below for particular type.)
Here are just some ideas of what to use in your stir-fry:

Your finishing result!

  • Sober buckwheat noodles
  • Sweet corn (sliced fresh from the cob)
  • Yellow and/or green courgette
  •  Finley cut carrot
  • Runner and/or French beans
  • Shallot and crushed garlic
  • Walnut or sesame oil
  • Green thai paste
How to make.
Stir-Fry is a very easy dish to make, it doesn't involve any preparation (apart from the slicing of the noodles!)

  1. Chop and slice all of your ingredients until you have, what looks like, a raw salad.
  2. Place your pan on the hob and pour in about 1 tbsp of walnut or sesame oil and add your garlic and shallots.
  3. Add all ingredients to the pan apart from the corn and noodles.
  4. Gently stir the mixture and add a tsp on green thai paste (or more if you love your spice.)
  5. Then add the corn but do not over cook as to retain shape and crunch.
  6. For the noodles, first boil 1 pint of water, place in separate pan, bring to a rolling boil and cook noodles for 5 minutes. Cook to al dente! 
  7. Finally add the noodles to the stir-fry mix with 4 tbsp of rich teriyaki sauce and a sprinkling of soy sauce.
  8. Sit down with your family or friends to enjoy this wonderful dish.
